And here I am again this morning with a new recipe, a dessert with cherries. I had the usual roll of puff pastry in the fridge and this time instead of using it for a savory pie, I used it to prepare sweet dumplings filled with ricotta and cherries. I did not add the egg neither in the cream nor to brush the pastry so I lightened, even if slightly, the feelings of guilt by eating this dessert. Today I'm excited, the big day has arrived and everything is ready for my friend's wedding. You must know that Flavia and I, yes, her name is like me, we met 10 years ago and since then, even if we have lived 2000 km away for years (she lived in Scotland, then in Germany and now in Spain where she met love) our bond has done nothing but grow and keep us connected more and more '. Unfortunately due to the great distance, we see each other twice a year but nevertheless we are always there for each other and today as a best man at your wedding I could not be happier for her who has met a special person who I know it will make her happy all her life. Method

How to make cherry dumplings

Cream the ricotta, icing sugar, vanilla and a pinch of cinnamon

Cut the puff pastry into 7/8 rectangles and place a spoonful of ricotta cream on one end of each rectangle obtained

Pitted cherries and place a few on each pile of ricotta

Close the pastry on itself and seal the edges well with the prongs of a fork

Place the ricotta and cherries dumplings on a baking sheet covered with parchment paper. Mix water and sugar in a cup and brush each bundle with that.

Bake in a preheated oven at 180 ° and bake for 15 minutes or until the bundles are puffy and golden

Let it cool and serve
